A word from our campaign creator:

I hated mushrooms when I was child. They felt like squidgy slugs in my mouth, and I know I’m not alone. In 2017, I became obsessed with fungi. Despite turning to mushrooms as a herbal remedy, I still could not eat them. Over the years, people would ask me what my favourite mushroom was to eat and I would have to reply, “I don’t really like eating them”. This has eaten away at me slowly, no pun intended, and I realised I was going to have to do something to change it. In 2022, I began to wean myself in to mushrooms. I started with Shiitake, slowly roasting them with other foods so they would absorb their flavours. I have now included a few other wild mushrooms in my diet and have lived to tell the tale.

So, why share this? Firstly, it’s important to practice what you preach and, secondly, I realised that fungi are part of a huge kingdom, and basing my dislike for mushrooms on one type of boring supermarket button mushroom was probably a bit narrow minded. If you hate mushrooms, and hated eating them as much as I did, let my tale inspire you to give them another go. Not only has British cooking improved since the 80s, but so has the variety of mushrooms now served in restaurants globally. I challenge you to find the culinary mushroom of your choice!
